Who Are We?

The Tasmanian Cheesery is a handcrafted, artisan cheese brand that has come to life in 2025 born out of a passion for making cheese for over 20 years and an opportunity, together with some friends, to start a business for the first time.

Situated in the quiet seaside town of Bream Creek, on a dairy farm, Tim Gadischke and his wife Candis are using a small space to bring their cheese creations to life. The opportunity to be in the dairy itself where the milk is taken literally, warm, straight from the cows each morning was too good to pass up.

Together with the keen interest of their two teenage children Tim and Candis plan to allow their creativity and expertise create a range of cheeses that will inspire cheese lovers to get excited.

Tim is an award winning master cheesemaker having qualified from Melbourne University in the last year the course was offered over 20 years ago. Since then he has worked in many parts of Australia, spent time in Europe, is a cheese judge and educator, in his spare time at home Tim can be found making Fetta!
